With a vast range of sake, shochu, Japanese craft beer and whiskeys at Kumo, customers are sometimes understandably overwhelmed with options. Since we get a lot of questions about our exotic brews and tipples we thought it was high time we threw the spotlight on selected products to help you navigate through our list of delicious drinks!

So please welcome to our first newsletter focusing on the drinks that we serve at Kumo. This week we'd like to introduce you to the Japanese craft beer brewery Baird Beer and a super-fresh sake from Australia's only Sake brewery Go Shu in New South Wales.

Baird Beer West Coast Wheat Wine

Baird Beer is a favourite at Kumo, their full flavoured and full bodied small batch beers are a perfect complement to the usual light Japanese lager styles. Where our draft Sapporo is the perfect accompaniment during dinner, Baird Beers offer a fantastic pre or post dinner drink.

Producers Notes: West Coast Wheat Wine Alc/Vol 9%

Wheat Wine is a beer style born on the U.S. West Coast in the 1980s. It is an offshoot of the English Barley Wine style. It is representative of the creativity and passion that are hallmarks of American West Coast craft beer.

The Baird Brewing Company is a family-run craft brewery and pub business headquartered in Numazu, Japan. Their motto is 'Celebrating Beer.' This means the comprehensive enjoyment of beer in a way that enhances the overall experience of life. Baird Beer is a celebratory experience in flavour.

The basic formula for the entire line up of hand-crafted Baird Beer is the same: Balance + Complexity = Character. The brewers of Baird Beer are dedicated to the crafting of beer that bursts with flavour and character. Baird Beer is produced in small batches with painstaking care, passion and reverence for tradition.

Go Shu Nama Genshu

We are very lucky to have this limited supply of fresh, unpasteurised full strength sake from Go Shu, that is only available a few times a year. Its freshness and savoury depth are not often experienced in Sake in Australia due to the delicate nature of Nama Sake.

Producers Notes: Nama Genshu (Undiluted fresh sake) 360ml Alc/Vol 18%

Undiluted fresh sake (Nama Genshu in Japanese) is a clean and fruity beverage which interacts well with an elegant and light acidity. Being natural fermentation products, every batch of sake has subtle but often distinctively unique flavour characteristics and crisp finish. This special sake is expertly brewed, without pasteurization or aging, hand-bottled and each batch produces only a very limited quantity. Due to its freshness and limited shelf-life, it is not possible to import such premium and fresh sake.
